This year, that culinary legacy comes alive once again through the Bali Royal Chili Festival 2025, a unique celebration that brings together 70 authentic royal sambals in a grand cultural setting.
Held at UMA Restaurant, Bali Safari Park, from August 28 to September 7, 2025, the festival showcases heirloom sambal recipes passed down from nine royal palaces in Bali. Each sambal is not only a burst of flavor but also carries with it historical depth and philosophical meaning—part of Bali’s identity.

More Than Just Sambal
The festival is not only about tasting the fiery flavors of royal sambals, but also about an immersive cultural journey. At the Bale Banjar, visitors are invited to experience:
• Royal Textiles, featuring traditional weaving techniques and intricate motifs.
• Royal Music, performed with Bali’s traditional instruments.
• Royal Coffee, served by professional baristas, complete with workshops for those who wish to learn the art of brewing.
Each cultural element is presented in its own royal pavilion, creating the atmosphere of stepping into Bali’s palatial world.

Alexander Zulkarnain, ACT Chief Marketing Officer of Taman Safari Indonesia Group, emphasized that the festival is a commitment to preserve Indonesia’s culinary heritage.
“Bali Royal Chili 2025 is designed as a cultural and culinary experience—unique, meaningful, and educational. We want this festival to be more than just a place to enjoy food, but also a space of appreciation for local wisdom,” he said.
Echoing this sentiment, Dewandra Djelantik from Puri Karangasem noted that presenting royal sambals to the public is a way of safeguarding a legacy once exclusive to the royal dining table.
