A new generation of sustainable gastronomy took center stage at The Westin Resort Nusa Dua on Friday (Dec 5) as Bali Hotels Association (BHA) hosted the Final of the BHA Cooking Competition 2025. Ten selected hotel chefs were challenged to transform 100% locally sourced ingredients into modern Indonesian dishes while applying strict zero-waste techniques from preparation to plating.
Carrying the theme “Zero-Waste, Full Flavor,” the competition reflects a growing commitment within Bali’s hospitality sector to prioritize responsible sourcing, waste reduction, and cultural preservation through food.
“This competition celebrates Indonesia’s culinary identity, hotel creativity, and our shared commitment toward sustainable tourism in Bali,” said Franklyn Kocek, Chairman and Head of Safety & Security BHA, and General Manager of Four Points by Sheraton Bali, Seminyak, who hosted the event.

Innovation Beyond Taste
The media witnessed firsthand how finalists worked with whole ingredients including vegetable stems, citrus peels, and alternative protein cuts through advanced techniques such as zero-waste butchering. Each dish was evaluated on taste, technique, creativity, sustainability practices, and overall concept.

Sustainability Showcase Strengthens Local Partnerships
Alongside the competition, BHA presented the BHA Sustainability Showcase—a curated platform linking hotels with local sustainable producers, suppliers, and innovators in Bali. The showcase aims to elevate regional products and encourage long-term procurement partnerships.
“Community collaboration is the key to sustainability,” said Ankit Airon, Head of Sustainability BHA and General Manager of Holiday Inn Resort Bali Canggu. “Connecting chefs and hotel leaders with local suppliers accelerates real change in Bali’s hospitality industry.”
BHA also introduced the BHA Sustainability Vendor Directory, a verified listing designed to support ethical, local, and environmentally responsible purchasing across member hotels.

After final deliberation, the judges announced the winners:

• 3rd Place: Muhammad Ikrom Bahri – Samabe Bali Suites & Villas
• Favorite Selection: Ni Kadek Dwik Anggreni – The Laguna, A Luxury Collection Resort & Spa

Annual Meeting for 171 General Managers
Following the competition, BHA held its Annual General Meeting (AGM) attended by General Managers from 171 member hotels, including the election of BHA’s Chairman for 2026 which will define BHA’s strategic direction for the year ahead. TS-01
