Crafted by award-winning mixologist Agus Sastrawan and Executive Chef Surya, this concept positions Cliff not only as a casual fine-dining destination in Bali but also as a stage where mixology and gastronomy come together to tell a story.
From Root to Fruit: Five Stages, Five Flavors
Drawing inspiration from the “anatomy of plants,” the program introduces five signature cocktails, each paired with thoughtfully curated tapas.
• Root – Revival & Beef Rendang Cone
An earthy cocktail infused with turmeric and local pineapple, symbolizing resilience and tradition. Paired with slow-cooked rendang presented in a modern cone, this pairing delivers deep, timeless flavors.
• Stem – Native Wood
Inspired by Mesoyi, a rare wood from Papua, this cocktail is served in a vessel resembling a tree trunk—an emblem of strength—complemented by bold, smoky notes.
• Leaf – Garden Harmony & Beef Satay Rembiga
A symbol of protection and innovation, this cocktail blends seasonal basil and moringa. Paired with spicy Lombok-style beef satay, it creates a dynamic balance of heat and freshness.
• Flower – Fragrance & Tongseng Lamb Tacos
An elegant reinterpretation of the classic martini, infused with the delicate aromas of magnolia champaca, frangipani, and ylang-ylang. Matched with spiced lamb tacos, it harmonizes floral elegance with rich Indonesian spices.
• Fruit – One Step Paloma
The pinnacle of the journey, this vibrant cocktail celebrates tropical abundance through Balinese pomelo and Kintamani orange, symbolizing joy, life, and togetherness.

“Our tapas are designed to be the perfect counterpoint to the cocktails,” explained Chef Surya.
Meanwhile, Agus Sastrawan added, “With Anatomy of the Archipelago, we tell the story of Indonesia through taste. By sourcing from local farmers, every sip and bite becomes a tribute to our heritage.”
A Refined Afternoon Experience in Bali
Anatomy of the Archipelago is available daily from 3:00 PM to 6:00 PM WITA, served both indoors and al fresco overlooking Bali’s dramatic cliffs. Cliff also offers lunch and dinner service, making it an ideal destination for a transformative dining experience.
