After graduating from Melbourne’s William Angliss Institute, he refined his craft under the guidance of iconic Italian chef Riccardo Momesso — a mentorship shaped by wild game hunts, long nights, and lessons rooted in authentic, soulful cooking.
His career then expanded across continents — from Australia’s high-energy kitchens to the Michelin-starred Turners in the UK — before he made Bali his culinary playground. His signature approach gained attention through standout roles at Mozaic Beach Club, Starfish Bloo at W Bali, and a five-year tenure as Executive Chef at Shishi Izakaya Lounge.
Now, at MAMAKA by Ovolo, Ashley brings his Mediterranean roots back into the spotlight, but with a fun, rebellious twist tailored for Kuta Social Club’s rooftop culture.
